Gluten Free Cream of Chicken Soup

If you didn’t have time to run to the store, or you are gluten-free girl like me, and gluten-free cream of chicken soup is hard to find, way overpriced, and highly processed, well then, this recipe is for you! What’s wonderful about this recipe is that once you do it a few times, you won’t think about it as a scripted recipe anymore. You’ll just pull out the ingredients and make it from memory AND you’ll begin to add things to it such as spices your family loves. It will become YOUR recipe!
Ingredients
- one cup of milk
- one cup of chicken broth
- 3 1/2 tbsp of corn starch
- (optional) 3 tbsp butter
- (optional) 1/2 tsp of spices such as: salt, pepper, garlic powder, onion powder, Montreal chicken seasoning, chipotle chili powder for a kick and more…..pick your spices!
Step One
Gather your ingredients. Simply pour all ingredients into a sauce pan and begin to stir allowing the heat to rise to a simmer. You do not want to burn it, so I typically use a low medium heat and increase the heat as I stir until it reaches a simmer. It takes about five minutes so don’t walk away!
Step Two
Add a few tablespoons of butter and any spices you might choose, to give your cream of chicken soup a kick. This might include something as easy as salt and pepper. Perhaps you want to add garlic salt or a chicken spice mix like Montreal chicken seasoning. If you are planning to use this in a different recipe as an ingredient, it might not be necessary to add any butter or spices at all, because the recipe already takes care of these flavor issues. So, the key is – are you using it as a stand alone soup, OR are you using it in a recipe?
Step Three
Serve and enjoy OR refrigerate to have ready for a recipe you might be making later in the week!
